The Les Roses Michelin-star restaurant at Casino2000 in Mondorf-les-Bains has launched it new Floralies menu for the autumn.

The champagne-and-scallops-themed menu is similar to that of last year and the year before, when it was very well received. Chef Alain Pierron has come up with a new variety of dishes which are complemented by French champagnes from Venoge, selected by sommelier Thierry Corona and matched to the individual dishes served.

With a taster of caviar and parsnip to whet one's appetite, the first of six courses from the full menu features scallops marinated in lemon, served with celery and scallions. The second dish of the presentation dinner saw scallops served in a warm cress and aniseed sauce, served with a dollop of cream.

The third dish saw the scallops (seared) accompanied by John Dory, both served caramelised, with a rich and heavy peanut sauce and red cabbage.

The main course of veal fillet (very tender indeed when prepared au point) was served with wild chanterelle mushrooms, a rich gravy and a light parmesan cheese sauce.

The gourmet meal was concluded with a brie cheese dish served with bread and a pumpkin and cherry jam, followed by a range of miniature desserts which included figs, panacotta and a crumble topping; and, finally, grilled pineapple with coconut sorbet and white chocolate.

The full (7-courses) Floralies Menu is availale until 2 November and is set at €79, but frequently diners select just a few courses (5 courses @ €50) - with the Champagnes de Venoge to match. On Sundays and Monday evenings a 3-course "suggestions du Chef", along with 2 glasses of wine, water & coffee, is available at €49/person.
