On Thursday 29 October 2026, Villa Pétrusse announced the appointment of Milan Brée as head of the kitchens at Le Lys restaurant, effective from January 2027.
Currently head chef at La Cristallerie, the gastronomic restaurant of Hôtel Le Place d'Armes, he will succeed Chef Kim de Dood, who will leave his position at the end of December 2026 to pursue a new entrepreneurial venture.
Villa Pétrusse said that it acknowledges the talent, creativity and commitment of Kim de Dood. Since the establishment opened in June 2025, he has made a “significant” contribution to laying the foundations of Le Lys's gastronomic identity.
Just a few months after opening, the restaurant received its first Michelin star, before the chef was recently named Young Chef of the Year by Gault & Millau.
Le Lys "is and remains a Michelin-starred restaurant", noted Villa Pétrusse, adding that its gastronomic identity is based on the expertise of its kitchen team, the establishment's heritage and "standards of excellence that remain unchanged". The transition has been carefully prepared to preserve the restaurant's achievements while allowing the new chef to gradually develop his own culinary style.
Trained in Nantes, Milan Brée gained experience at several prestigious establishments, including Domaine Les Crayères in Reims and La Villa de Camille et Julien in Luxembourg, where he worked as sous-chef for three years. Since February 2025, he has led the kitchens at La Cristallerie.
La Cristallerie will temporarily close for kitchen renovation work before reopening with a new restaurant concept. Milan Brée will take over as chef at Le Lys in January 2027.
Villa Pétrusse and Hôtel Le Place d'Armes highlighted their commitment to internal promotion and staff development.
"We are delighted to support Milan in this new challenge. His creativity, high standards and energy will help write this new chapter in the gastronomic history of Le Lys," said Stéphanie Raimbault, General Manager, on behalf of Compagnie Hôtelière La Luxembourgeoise.
