A new family-run project, Poissonnerie Garçon-Valençon, has opened a fishmonger and catering shop in Bertrange, offering a daily selection of fresh fish and seafood sourced from small, sustainable producers.

The shop opened its doors on Wednesday 4 February 2026. Reflecting on the first week of operation, the owner Nancy Garçon said that customers have already been calling to share positive feedback.

Speaking further with Chronicle.lu, Nancy Garçon explained that the family works closely with small fishing boats and avoids large trawlers whenever possible. Fishermen call in their available catches and deliveries arrive the following morning so product selection changes daily depending on the catch.

The fish comes mainly from Boulogne-sur-Mer in France, the Belgian coast and the Netherlands, with smaller quantities from Scotland and Iceland.

The initial idea of the shop roots back to a long-held dream of Nancy Garçon’s partner, who has worked as a fishmonger for 26 years. The owner said that the couple began serious planning in 2020 and signed an agreement with the municipality that same year. They originally aimed to open in 2023 but COVID-19, floods and other delays pushed the project back. After their children grew up, they finally decided to move forward with the plan.

Nancy Garçon highlighted that their selection prioritises seasonality. During opening week, the shop offered sole, small sole and skate. “Skate is the fish of lovers. It’s the season for Valentine’s Day,” she explained, adding that the team prepares all products fresh without freezing.

Asked about their choice of location, Nancy Garçon explained that they approached several municipalities before settling on Bertrange, where they presented their concept to the municipal council with tastings and got accepted. She continued: “We don’t want to become big. We want to stay small. We really want contact with customers. We want to teach them to eat better and to choose fish more carefully.”

The owner also emphasised their animal welfare practices. She said: “We are not allowed here to kill it alive. That’s a no. We make it sleep first, and then we kill it. We want to respect the animal.” She added that Switzerland and the United Kingdom (UK) have already adopted such rules, while Luxembourg has not yet taken a decision.

Alongside seafood, Poissonnerie Garçon-Valençon collaborates with small producers and sells organic products and specialty home-made oils.
